8 ounces tofu – stir fry with tumeric, cumin, onion/garlic powder, black salt/Himalayan salt to taste 1-2 Tbsp olive oil and/or vegan butter/margarine 1/4 red onion (thinly sliced) 1/2 red pepper (thinly sliced) 2 cups kale (loosely chopped) Optional: serve with salsa, cilantro and stir fried potatoes
