Spicy Thai Peanut Noodle Bowl with Veggies and Mango

Ingredients
  

  • 2 8 ox packages rice noodles
  • 4 red peppers
  • 2 cups shredded carrots
  • 2 bunches green onions
  • 2 cup peanuts
  • 1 bag spinach
  • 1 1/3 cup peanut butter melted slightly in the microwave, about 30 seconds
  • 5-6 Tbsp Siracha
  • 3 Tbsp rice vinegar
  • 4 cloves garlic minced
  • 4 tsp garlic powder
  • 1/2 cup hot water
  • 1 can 1 can full fall coconut milk (to tone down the spice and add creaminess)

Method
 

  1. Simply stir fry the peppers and carrots about 10 minutes on medium heat.
  2. Mix sauce ingredients in a bowl.
  3. Boil and drain the noodles per package directions.
  4. Pour the noodles into a large pot and mix in the sauce, peppers and carrots.
  5. Mix in the spinach with the hot noodles (so they wilt), and top with crushed peanuts and green onions.
  6. Serve cold or hot with mango and lime.
