Simply stir fry the peppers and carrots about 10 minutes on medium heat.
Mix sauce ingredients in a bowl.
Boil and drain the noodles per package directions.
Pour the noodles into a large pot and mix in the sauce, peppers and carrots.
Mix in the spinach with the hot noodles (so they wilt), and top with crushed peanuts and green onions.
Serve cold or hot with mango and lime.
