- 8 ounces tofu – stir fry with tumeric, cumin, onion/garlic powder, black salt/Himalayan salt to taste
- 1-2 Tbsp olive oil and/or vegan butter/margarine
- 1/4 red onion (thinly sliced)
- 1/2 red pepper (thinly sliced)
- 2 cups kale (loosely chopped)
- Optional: serve with salsa, cilantro and stir fried potatoes
